Sauteed Radish Greens



Red Radish - 1 bunch, with the greens
Oil - 2 tsp
Garlic - 4 cloves, minced
Dried Red Chili - 1
Turmeric - a pinch
Salt
Roadted Peanuts - a handful (optional)

Cut away the radish from the bunch. Wash well and grate using a box grater. Keep aside.

Soak the radish greens in a big bowl of water for a couple of minutes to remove sand and dirt. Remove from the bowl and wash under running water. Chop the greens along with the stems and keep aside.

Heat a pan and add the oil. Immediately add the garlic and dried red chili. Once the garlic starts to brown, add the grated radish.

Stir fry on high heat till the radish starts to brown.

Then add the greens, turmeric and salt. Cook for a minute till the greens wilt. Add peanuts, mix well and remove from heat.

Serve hot.

Red Radish Pakoda


Red Radish - 4 small
Besan / Chickpea flour - 1 tbsp
Brown Rice Flour - 1/2 tbsp
Cornstarch - 2 tsp
Water - 3 tbsp
Nigella Seeds /Cumin Seeds - 1/4 tsp
Salt
Turmeric - a pinch
Red Chili Powder - 1/4 tsp
Chat Masala - 1/2 tsp
Peanut Oil for deep frying

Mix besan, brown rice flour, cornstarch, cumin seeds, salt, turmeric, red chili powder and chat masala together. Add water little by little to make a thick pancake like batter.

Cut the radish sidewise into thin roundels.

Dip each roundel into the batter and deep fry on medium high flame till light brown on both sides. Serve hot.

Radish Stir Fry / Bori diye Mulor Chhechki



Daikon Radish - 1/2, grated
Radish Greens - one bunch, take only the leaves from the stem and chop them
Bori / Dried Lentil Dumplings - 1/2 cup
Olive Oil
Cumin Seeds - 1/2 tsp
Bay Leaf - 1
Dried whole red chilli - 4
Turmeric
Salt
Sugar

Heat oil in a pan. Add the dried dumplings and fry them for around 5 minutes till they are golden brown. Remove and crush them into small pieces using a mortar and pestle. Add some more oil to the pan and temper with cumin seeds, red chilli and bay leaf. Add the grated radish, radish greens, salt, turmeric and cook on medium heat till the radish is almost cooked. Add half of the crushed boris and cook for a few minutes more. Remove from heat, sprinkle the remaining boris on top and serve.
